Bait out the running attack seems to be your best bet. Otherwise you are looking at run into their face and parry which will be backstab bait for anyone with half a brain. Best to bait out the running r1 for the predictive first hit parry or abort. Otherwise you might be taking more damage than you need to.

Maybe you're lagging then because it's more than possible to punish the R1 spam. Heck, I use twin maces against estoc wielders and still win. Have a medium shield and soak up their first hit (usually just a poke) and then parry. When they panic hit them with an art to close the gap and lock them down.
